Ingredients - Fajitas:
- 1/3 cup seitan (such as Whitewave or Lightlife), cut into strips
- 1/4 teaspoon dried oregano
- 1/2 medium onion, sliced
- 1/2 red bell pepper, sliced
- 1 green onion, sliced
- 1 teaspoon olive oil
- 1/8 cup low sodium vegetable broth
- 1 large (10-12 inch) high fiber tortilla
- Sauce:
- 1/4 cup non-fat plain yogurt
- 1/4 avocado
- 1 teaspoon lime juice
- 1 tablespoon chopped cilantro
Instructions - Saute seitan in 1/2 teapsoon olive until browned, about 6 minutes.
- In a seperate pan, saute onions in remaining olive oil for 5-6 minutes.
- Add garlic, red pepper and oregano; saute for a few minutes.
- Stir in seitan and broth and simmer until red pepper is tender, about 3 minutes. Add green onion and pepper to taste.
- Combine sauce ingredients in a blender and process until smooth.
- Place fajita mixture into a warmed tortilla and top with sauce.
- **Tofu or tempeh may be substituted for seitan.**
